205 is the width of the tire in mm.
50 is the height of the sidewall, expressed as a fraction of the width. so the sidewall is 50% of 205mm, so its 102.5mm high.
16" is the diamter of the rim.

you can change either the width or the sidewall, or both.
i'm pretty sure you can fit 195-215, MAYBE 225 tires on stock rims.
as for the sidewall, 45 would be the smallest i would go, 40's would look plain dumb. 60's are prolly the tallest i would go with, but that would look like a fcukin 4x4

check this thread for recommended tire sizes:

my rear tires are 60's and the fronts are 50's. the rears look rediculous and they are really noisy.

I'm running 215/50/16 on my car and I'm lowered. It looks kinda like semi-slicks with the slightly fatter tire than stock. I got BFGoodrich Traction T/A's, V-rated.

The tyre width is totally dependent on rim width. Check the sticky, it has all the tyre sizes and results in it.

The other piece of advice I can give is don't listen to your friend with the tibby anymore.
