Enkei evo 8 wheels 17x8 35 offset

Just bought Evo 8 stock wheels with tires for my 5th gen. the tires are 235/45. i put them on and it peeks out the fender a bit. it also rubs on my fender. I want to use them as winter wheels so should I get new tires? I was thinking 235/40. I just don't want to rub and not only that I don't want to have stretched tires. My friends suggested 215/40. They said that'll be the best for me. What do you guys think? I just need a perfect setup for winter.

My car is also stock height.

215-45 would be the best set up for you since you're stock height.
