Paint Advice

Okay so i'm really considering painting my car when i go back home over Christmas break but i do have a couple of things that i need some advice over.

1) Do y'all think that the temperature will be a problem, i live in Texas and where I live doesn't get too cold?

2) Should i go with a 1 or 2 step paint job, i plan on painting it white.

Any help will be appreciated, Thanks!
