Now that the cold weather has really got here in the Northeast, my '00 Lude revs between 1,000 and 3,000 all by itself when I first start it up. Never had this happen before. Any ideas?

Sounds like the problem could be the fast idle thermo valve or air intake bypass. Do you have a Helms manual?

mine revs from 1800 to 2000 up and down like it is camed as it is warming up then settles to 1200 then to 750 when fully warm, i dono what the deal is but its not hurtin anything

The Lude in your post is just like mine, if it's wearing a coat of Nordic Mist paint. Thanks for the reply, I think I figured it out. Sticking thermostadt..... No heat, wouldn't warm up and then started to over heat before the therm opened up and temp. got normal along with the idle.
Wondering now if the guy I bought the car from has the right antifreeze to water ratio in the cooling system? Partial freeze maybe? Anyhow, don't have to drive it in the cold but I will post what I find to help others when it warms up a bit. If the coolant checks out along with the therm. I'll look at the sensors you suggested.
