WOAH! That isnt right! Ideas?

So I did the timing belts, removed the balance shaft belt and replaced the head gasket and tweaked my dizzy timing to get it set properly (stock).
Had an idle surge issue and had 0 vacuum leak. Idle screw was most of the way out thanks to the previous owner. Tweaked that ALL the way back in and I'm still at 1k rpm idle after warm up.
Idle still surges at times but it comes and goes and is nowhere near as bad as it was.
Now heres the issue I need to troubleshoot:

Entering the freeway when I goose the throttle it backfires on me, sputtering and acting like I just flooded it or something.

I know it would help if I had a fuel pressure gauge but I dont atm.
Air system is totally clean, new filter and CAI. Been running supreme gas with fuel injector cleaner every other fillup.
Only thing I can think of is that I'm not getting enough fuel into the chambers (injectors or pressure) or my ratio is somehow off....
Tell me what to do and I'll see to it.

have you looked at your spark plugs? they'll sometimes tell you if you're running rich or lean or tell you a load of other problems. that could get you started. i won't be surprised if you have ashy deposits on your plugs from using injector cleaner ever other fill up. there really is no need to run fuel injector cleaner that often. you're wasting your money. i might do it ever OTHER oil change (6k miles). or about once a year. maybe twice...

Do you have a bigger fuel pump, when I changed mine to a 255 if my gas gets so low it kinda acts like it floods too, i just messed with my fuel pressure and now it only does it when it's super low.
